Add dry ingredients.  Drop on greased cookie sheet. It's healthy to.  So here it is.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold; text-decoration: underline;"&gt;Easy Pancake Mix&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;1 1/2 Cups All-Purpose Flour&lt;br /&gt;1 1/2 Cups Whole Wheat Pastry Flour&lt;br /&gt;6 Tablespoons Yellow Cornmeal&lt;br /&gt;6 Tablespoons Sugar&lt;br /&gt;1 Tablespoon Baking Powder&lt;br /&gt;1 Teaspoon Baking Soda&lt;br /&gt;1/2 Teaspoon Salt&lt;br /&gt;&lt;br /&gt;Combine the all-purpose flour, pastry flour, cornmeal, sugar, baking powder, baking soda, and salt in a bowl and mix well.  Store in a cool, dry place.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold; font-style: italic;"&gt;Banana Pancakes with Walnut Honey&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold; text-decoration: underline;"&gt;Pancakes&lt;/span&gt;&lt;br /&gt;1 1/3 cups Easy Pancake Mix  (above)&lt;br /&gt;1/4 teaspoon ground cinnamon&lt;br /&gt;1 cup low-fat buttermilk&lt;br /&gt;1/4 cup water&lt;br /&gt;1 egg&lt;br /&gt;1 tablespoon canola oil&lt;br /&gt;1 teaspoon vanilla extract&lt;br /&gt;1 large banana, halved lengthwise and cut into thin slices&lt;br /&gt;1/2 cup fresh raspberries (optional)&lt;br /&gt;&lt;br /&gt;Walnut Honey&lt;br /&gt;1/2 cup walnuts, chopped&lt;br /&gt;1/3 cup honey&lt;br /&gt;1 tablespoon water&lt;br /&gt;&lt;br /&gt;1.  To prepare the pancakes: Combine the pancake mix and cinnamon in a large bowl.  Combine the buttermilk, water, egg, oil, and vanilla extract in a separate bowl.  Whisk into the pancake mix and stir until smooth.  Fold in the banana.  Set aside.&lt;br /&gt;&lt;br /&gt;2.  To prepare the walnut honey:  Combine the walnuts, honey, and water in a small bowl.&lt;br /&gt;&lt;br /&gt;3.  Coat a large nonstick skillet with cooking spray and set over medium heat.  Add the pancake batter in scant 1/4 cupfuls and cook, in batches, for about 2 minutes or until the pancakes have puffed and the undersides are lightly browned.  Turn the pancakes and cook for about 2 minutes longer or until lightly browned. Add 6 oz. frozen orange juice concentate.  Stir until dissolved.  Add 1/4 cup cold water.  Add 1 can mandarin oranges with juice.  Add 1 tall can crushed pineapple with juice.  Set salad .&lt;br /&gt;&lt;br /&gt;Then - whip 1 envelope Dream Whip.&lt;br /&gt;&lt;br /&gt;In another bowl make up 1 large package Lemon  Instant Pudding (or 2 small) using only 1/2 the milk stated on the box.&lt;br /&gt;&lt;br /&gt;Fold the Dream Whip and Lemon pudding together to make the frosting. That's one reason why I love the holidays...&lt;br /&gt;2 C flour&lt;br /&gt;2 T brown sugar&lt;br /&gt;1 T baking powder&lt;br /&gt;1 1/4 t pumpkin pie spice&lt;br /&gt;1 t salt&lt;br /&gt;1 3/4 C milk&lt;br /&gt;1/2 C pumpkin&lt;br /&gt;1 lrg egg&lt;br /&gt;2 T vegetable oil&lt;br /&gt;Mix just until everything is mixed in, but not longer if you can help it. Well, she made these delicious pumpkin cookies that I love.  I normally don't like pumpkin cookies because they are too cakey, but these are good, and not to cakey to me. &lt;br /&gt;They're also not as high in fat like other cookies because there is only 1/2 a Cup of shortening, instead of a cup of butter or whatever.  So, instead of eating only 2 at a time, you can have 4 and not feel too guilty! =)&lt;br /&gt;&lt;br /&gt;1/2 C shortening&lt;br /&gt;1 1/4 C brown sugar (firmly packed)&lt;br /&gt;2 eggs&lt;br /&gt;1 t Vanilla&lt;br /&gt;1 1/2 C pumpkin puree&lt;br /&gt;2 1/2 C flour (I end up using a cup more than that, and I put half white and half whole wheat)&lt;br /&gt;4 t baking powder&lt;br /&gt;1/2 t salt&lt;br /&gt;1/2 t cinnamon&lt;br /&gt;1/2 t nutmeg&lt;br /&gt;1 C raisins &amp;amp;/or nuts (optional... I don't do this)&lt;br /&gt;1/2 package of chocolate chips (I do a whole package)&lt;br /&gt;&lt;br /&gt;Cream shortening and brown sugar, and eggs and beat well.  Add vanilla and pumpkin and mix, then all the dry stuff and mix well.  Last, the chocolate chips.  Cook at 375 for 9-12 minutes ( I do 9).  Oh, and grease the cookie sheet. Londa's Christmas tradition. They have a&lt;br /&gt;pumpkin-ee/chocola-tee/autumn-ee taste. My best friend Linda loves them with her breakfast.&lt;br /&gt;&lt;br /&gt;Chocolate Pumpkin Cake (loaves)&lt;br /&gt;&lt;br /&gt;1 1/4 cup oil&lt;br /&gt;3 1/2 cup sugar&lt;br /&gt;3 eggs&lt;br /&gt;l 1/2 teaspoons vanilla&lt;br /&gt;l 1/2 teaspoons baking powder&lt;br /&gt;3 3/4 cup flour&lt;br /&gt;1 3/4 teaspoons salt&lt;br /&gt;3 1/2 cup canned solid pumpkin (Libby's is best)&lt;br /&gt;3 squares unsweetened chocolate&lt;br /&gt;1 1/4 teaspoons soda&lt;br /&gt;1 1/4 teaspoons cinnamon&lt;br /&gt;1 1/4 teaspoons cloves&lt;br /&gt;1/2 teaspoons nutmeg&lt;br /&gt;several big handfuls chocolate chips&lt;br /&gt;&lt;br /&gt;Melt the chocolate chips in 1/2 cup oil (low heat). Cool.&lt;br /&gt;&lt;br /&gt;In separate bowl cream the remaining oil and the sugar.  Beat in eggs and melted chocolate.  Add the pumpkin and vanilla.&lt;br /&gt;&lt;br /&gt;Combine dry ingredients together.  Mix in chocolate chips. In a medium bowl, whisk together flour, pie spice, baking soda, and salt; set aside.&lt;/span&gt; &lt;/li&gt;&lt;li&gt; &lt;span&gt;With an electric mixer, cream butter and sugar on medium-high speed until smooth; beat in egg and vanilla until combined. Beat in pumpkin puree (mixture may appear curdled). Reduce speed to low, and mix in dry ingredients until just combined. Fold in chocolate chips.&lt;/span&gt; &lt;/li&gt;&lt;li&gt; &lt;span&gt;Spread batter evenly in prepared pan. Bake until edges begin to pull away from sides of pan and a toothpick inserted in center comes out with just a few moist crumbs attached, 35 to 40 minutes. Cool completely in pan.&lt;/span&gt; &lt;/li&gt;&lt;li&gt; &lt;span&gt;Lift cake from pan (using foil as an aid). No one in my family is that crazy about marmalade so I had to find a way to use it and came up with this.  My family loves it.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Orange-Glazed Chicken&lt;br /&gt;&lt;br /&gt;Per each boneless, skinless chicken breast top, in the order given, with:&lt;br /&gt;1 tbsp orange marmalade&lt;br /&gt;1/2 - 1 tsp minced garlic salt,&lt;br /&gt;freshly ground black pepper to taste&lt;br /&gt;oregano and basil to taste&lt;br /&gt;5-6 pieces of thinly sliced onion&lt;br /&gt;Bake at 350 degrees until done, approximately 40 minutes, depending on size of chicken pieces. &lt;br /&gt;&lt;br /&gt;also:&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Baked Apples&lt;br /&gt;&lt;br /&gt;for each apple half top with:&lt;br /&gt;1 tbsp orange marmalade&lt;br /&gt;sprinkling of cinnamon&lt;br /&gt;2-6 berries, raspberries, blueberries, etc&lt;br /&gt; few chopped walnuts&lt;br /&gt;drizzle tiny bit more marmalade over top of nuts (or may use agave nectar)&lt;br /&gt;Bake at 350 degrees until done. &lt;br /&gt;I serve them still slightly crunchy. &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Cherry Pie&lt;br /&gt;&lt;br /&gt;1 uncooked pie shell&lt;br /&gt;31 can pie filling&lt;br /&gt;1/2 - 1 c chopped walnuts (to taste)&lt;br /&gt;1/2 c semi-sweet chocolate chips&lt;br /&gt;Mix pie filling, walnuts and chocolate chips together. &lt;br /&gt;Pour into pie crust and bake according to crust recipe directions.&lt;br /&gt;&lt;br /&gt; Also, when I make pancakes I add a handful of oatmeal, half cup cottage cheese, cinnamon and a little applesauce to the mix. My spot-light in the dining room doesn't help.  Those are green noodles, folks.&lt;br /&gt;&lt;br /&gt;So, I love salads, but I really like then better when other people make them... so I don't have a recipe I can think of off-hand.  BUT, I did get my Taste-Of-Home magazine in the mail today, and it gave me a great idea for dinner!  I never go directly by the recipe, so this is a mix from the magazine and me.  You could do the sauce without the basil noodles, but this noodle recipe is really easy, so try it! (when you have time-it takes an hour and a half to let the noodles rest and dry)&lt;br /&gt;&lt;br /&gt;Process 1 1/4C packed basil in a food processor until chopped fine&lt;br /&gt;Add:&lt;br /&gt;3 C flour&lt;br /&gt;3 eggs&lt;br /&gt;1/4 + 1 T Water&lt;br /&gt;2 t olive oil&lt;br /&gt;&lt;br /&gt;Process 30-35 seconds or until it forms a ball.  Then knead it on a floured surface until smooth and elastic.  The recipe says 8-10 minutes, but I never do it that long.  Cover the ball and let rest for 30 min.  Divide the ball into 4 pieces and roll out one at a time, to about 1/16th of an inch thick (so,very thin) and cut about 1/4 inch wide.  Dry for an hour.   I did it on a towel on my kitchen table.  After that hour, cook in boiling salted water for 3-4 minutes.   It may take an hour and a half for this, but it is REALLY easy and good!&lt;br /&gt;&lt;br /&gt;For the sauce, I did...&lt;br /&gt;Saute:&lt;br /&gt;1 small onion&lt;br /&gt;2-4 garlic cloves-minced&lt;br /&gt;2 T olive oil&lt;br /&gt;1 small green pepper&lt;br /&gt;2 tomatoes cut into chunks&lt;br /&gt;1 can of mushrooms (if you had fresh, that'd be better)&lt;br /&gt;1 can of sliced olives&lt;br /&gt;&lt;br /&gt;Add:&lt;br /&gt;3/4 c chicken broth&lt;br /&gt;1-2 c chicken (I just used canned chicken cause it was fast, but if I thought ahead, a rotisserie chicken from the store would have been good, or cooked chicken breast, or even a cut up sausage log thing (I don't know what they're called))&lt;br /&gt;1 t oregano&lt;br /&gt;1/4 t salt&lt;br /&gt;1/4 t pepper&lt;br /&gt;Bring all this to a boil and cook for 8 minutes.  Then add:&lt;br /&gt;1 C cream or milk (the recipe calls for cream, which would be really good, but I wanted to keep it light so I did milk and then thickened it with corn starch at the end... it was good)&lt;br /&gt;Then cook it until it is saucy.  Pour over your drained noodles when it's done! Drain and Set aside. Steam carrots and broccoli until tender (4-5 min). Place the vegetables in a large bowl, add the remaining ingredients and mix well. Cool, remove skins and&lt;br /&gt; dice up as forpotato salad&lt;br /&gt;&lt;br /&gt;The sauce:&lt;br /&gt;Whip the whipping cream first in your mixer - whipped to the peak stage&lt;br /&gt;1/2 pint whipping cream&lt;br /&gt;  Then fold in:&lt;br /&gt;1 cup Miracle Whip&lt;br /&gt;1/2 cup sweet pickle relish (or more)&lt;br /&gt;5 boiled eggs cooled and chopped very fine&lt;br /&gt;About 1/4 cup onion chopped up very fine and is optional&lt;br /&gt;2 stalks celery chopped very fine is optional&lt;br /&gt;salt to taste&lt;br /&gt;  Then&lt;br /&gt;Fold in the cooled cubed potatoes&lt;br /&gt;  Chill&lt;br /&gt;&lt;br /&gt;Now we like to add finely chopped cucumbers and chopped ripe&lt;br /&gt;tomatoes  if we have them. Summery, or Springy, -&lt;br /&gt; or just plain easy, and good.&lt;br /&gt;When I have to come up with something to bring&lt;br /&gt;for a potluck at work I bring&lt;br /&gt;this. My aunt Nora would make these all the time.&lt;br /&gt;I hope you like them!&lt;br /&gt;&lt;br /&gt;1 cup &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_0"&gt;shortening&lt;/span&gt;&lt;br /&gt;1 cup sugar&lt;br /&gt;1/2 cup brown sugar&lt;br /&gt;2 eggs&lt;br /&gt;2 cups + 4 Tbsp flour&lt;br /&gt;1 tsp soda&lt;br /&gt;1 tsp salt&lt;br /&gt;6 oz. chocolate chips&lt;br /&gt;1 tsp vanilla&lt;br /&gt;&lt;br /&gt;Cream shortening, sugar, eggs. Add dry ingredients. Add chocolate chips. Bake at 350 for 10-12 minutes.
